Chef Demo

10:00 a.m. on 6/6
Chef Demos are sponsored by
Piedmont Hospital
After making an indelible mark on the industry with Octopus Bar, a celebrated post-shift spot among our city's chefs, Angus Brown's newest concept was one of the most highly anticipated openings last year. And rightly so. Lusca has since been named as a semifinalist for the James Beard Foundation's Best New Restaurant category, included in GQ's list of "America's 25 Outstanding Restaurants," and listed in bon appetit's "America's 50 Best New Restaurants." Angus was also named one of Cooking Light's "Trailblazing Chefs" and was nominated for Food & Wine's "People's Best New Chef." He's trained in French, Italian, and Asian cuisine, and has researched and cooked his way through Japan and Vietnam. Lucky for us, he's settled in his hometown of Atlanta, where he's committed to using local ingredients and serves on the chef advisory board of Atlanta's Community Farmers Markets. You won't want to miss this Saturday's demo with one of our city's most creative chefs!

Chef Demo with Nick Leahy
of Saltyard
10:00 a.m. on 5/17
Chef Demos are sponsored by
COUNTRY Financial
Chef Nick Leahy is one worldly chef. He was born in Bermuda and grew up in England before moving to Atlanta in elementary school. With a mother who's half-French, he was exposed early on to delicacies like duck confit and knew even then that he wanted to be a chef. His culinary career has included stints at Food Studio, Two Urban Licks, Stats, and Parish, among others. But it was in 2011 that he and his wife really took an international leap of faith, traveling (and eating around) Europe and Africa for six months, then living in London for a year. In London, Leahy served as executive chef at Daylesford Organic, a restaurant that sources ingredients from its own farm. He brought back from abroad an even richer global perspective and a strengthened commitment to all things local and organic. Just down the road from PRFM, he opened his own restaurant, Saltyard, almost a year ago. Stop by the demo tent this Saturday to catch up with the chef!

Hot Dog!

Ok, let’s get real…It’s gonna be hot from here to the Fourth. So how about we think on some things that are both hot and enjoyable—hint: one of them fits in a bun and is a pretty delicious Fourth of July cookout item. Don’t forget to pick up your hot dogs and other grillin’ meats along with buns, veggies, fruits, and desserts that are sure to make your holiday get-together the coolest place on the block.

Chef Demo with Jared Lee Pyles
of HD1 – 10:00 a.m. On 6/30

Chef Demos are sponsored by
Whole Foods Market

You won't want to miss this Saturday's demo with our own PRFM “Iron Chef” winner Jared Lee Pyles of Richard Blais' haute doggery HD1. Chef Pyles first earned his kitchen stripes at restaurants in Auburn, Alabama: in the front of the house, as a pizza maker, and at the state's only microbrewery. He then enrolled at Le Cordon Bleu in Atlanta, but before his classes even began, Pyles was noticed by chef Mike Isabella who asked him to apply for a position at Pano I. Karatassos' much-lauded Kyma. Pyles went on to work with chefs Michael Tuohy and Kevin Gillespie at Woodfire Grill, where he learned the art of whole animal butchery and charcuterie. His culinary path then met up with that of “Top Chef” Richard Blais, first at Home and later at FLIP burger boutique. As a chef at FLIP, Pyles' inventive outlook landed him the opportunity to conceptualize HD1’s menu with Blais. Serving as executive chef there, Pyles continues to think outside the proverbial box when it comes to exciting diners with his thoughtful twists on favorite dishes. Stop by the demo tent and catch a little of that excitement, y'all.

Also this week...
Attention, market shoppers: turn your greens into some green! Just buy seven different veggies at the market and not only will you have made good healthy choices, you'll also be entered to win a $20 gift card to PRFM! Stop by the info tent and show us your seven to enter.

Chef Demos are sponsored by
Whole Foods Market
Before you enjoy all that delicious, delicious ice cream, don’t forget to stop by the chef demo and lay down a layer of the savory stuff. Hint: it is also delicious, courtesy of Chef Ron Eyester. Last year, we loved Chef Ron’s unique take on what it means to eat local, and we know from experience that he makes preparing the season’s best a whole lot of fun. Ask him about cooking at the James Beard house recently or about his upcoming Allman Brothers-inspired “Eat a Peach” dinner. Or maybe ask about brunch for supper. Just don’t you worry—“The Angry Chef” is really one of the nicest guys you’ll meet.

Chef Demo with Zeb Stevenson
of Livingston & Proof and Provision
10:00 a.m. on 6/16
Chef Demos are sponsored by
Whole Foods Market
Chef Zeb Stevenson has been pretty busy since his PRFM demo last year…not only has he held it down at the Georgian Terrace’s cooler-than-cool LivingstonRestaurant, he’s  recently debuted Proof and Provision in the basement of the joint, too. And it’s one happenin’ joint. Zeb’s style of marrying local ingredients with contemporary American and international influences inspires both menus, with white tablecloths upstairs and “real fun” reinvented bar-bites downstairs. It’s a best of both worlds kind of thing, we’d say. And when he’s not busy in the kitchen(s), Zeb keeps his creative juices flowing as a musician, painter, coffee roaster, and cyclist. Stop by the demo tent this Saturday for his creative take on local + international: Thai Chicken Salad featuring pasture-raised poultry from Heritage Farms.

Chef Demo with Lara Creasy
of JCT., No. 246, & The Optimist
10:00 a.m. on 6/9
Chef Demos are sponsored by
Whole Foods Market
If you’ve enjoyed a delicious beverage at JCT. Kitchen & Bar, No. 246, or Westside’s newest hotspot The Optimist and its Oyster Bar, you’ve got master mixologist Lara Creasy to thank. We told you about her many accolades last year, but such a genius as Lara is constantly receiving more honors for her work crafting some of the freshest cocktails in the southeast. She currently serves as secretary for the Atlanta chapter of the U.S. Bartenders’ Guild and just completed her Certified Specialist of Wine course, receiving the highest exam score in her class. She’s drawn coastal inspiration for the bar program at Chef Ford Fry’s most recent debut, seafood restaurant The Optimist, including a clever martini of pink gin, blanc vermouth, and a garnish of smoked salmon. At The Oyster Bar, Lara features a daily punch with seasonal fruit served by the pitcher and “oyster backs” made to pair with daily raw bar specials. Her wine and beer list also feature coastal regions and port cities, meaning that a staycation is just a hop, skip, and a sip across midtown. You’ll want to swing by the demo tent this Saturday for a taste of the good life.

A More Perfect [Food] Union

This week at PRFM

Chef Demo with Steven Satterfield
of
Miller Union — 10:00 a.m. on 10/8
Chef Demos are sponsored by
Whole Foods Market

If you care about the local food movement in Atlanta, you care deeply about Miller Union. There, Executive Chef and Co-Owner Steven Satterfield brings his 20 years of experience in the restaurant industry to bear in a meaningfully delicious way, with a menu that takes root from his strong relationships with local farmers. A Georgia native who spent his childhood in Savannah, Satterfield creates his dishes around the week’s Southern harvest; he is careful to prepare foods with rustic preparations that highlight those beautiful flavors that come from ingredients at their peak. His eye for design led him to the architecture program at Georgia Tech, with a final year studying abroad in Paris, but after graduation he found himself working in kitchens and discovered a new passion: cooking. As any diner who’s visited Chef Satterfield during his time at Floataway Café, Watershed, and now at Miller Union can attest, his cooking is a true art form. Satterfield’s commitment to the good food movement goes beyond the diner’s experience, though; he’s also an active member of Slow Food Atlanta, Georgia Organics and the Southern Foodways Alliance. And his great work has not gone unnoticed—in 2011, he was nominated for Food & Wine and CNN Eatocracy’s “People’s Best New Chef,” following Miller Union’s placement on the “Best New Restaurants in America” lists from Bon Appetit and Esquire, as well as its being named Atlanta magazine’s “Restaurant of the Year” in 2010. Also, a little group called the James Beard Foundation recognized Miller Union as a semifinalist for the national award of best new restaurant in 2010. When the celebrated chef isn’t in the kitchen, he’s cycling, exploring the Georgia coast, listening to new music, and researching cocktails with the bartenders of Miller Union. Oh, and one other thing—teaching people to cook (that’s YOU this Saturday)!

of
The Shed at Glenwood
10:00 a.m. on 10/1

Chef Demos are sponsored by

If you haven’t had the pleasure of a leisurely brunch at The Shed or visited the fine folks there for Wednesday’s $3 Slider Night (not your usual sliders, y’all), get out your pin, paper, or techno gadget and jot this down: check out The Shed at Glenwood! You’ll feel right at home in the cozy neighborhood spot and, with Executive Chef Lance Gummere at the helm of the open kitchen, you’ll want to stay a while. His extensive culinary experience includes over 15 years working with Chef Shaun Doty and he carries his love for simply prepared, market fresh menus to his dishes at The Shed. His outlook is casual, but his food is something serious—the perfect combination which results in dishes like Braised Suckling Pig with Heirloom Corn Grits and Collards, Baked Cedar Plank North Carolina Trout with Mushrooms, Scallions, and Fennel Salad, and a Shepherd's Pie made with Smoked Beef Brisket and Yukon Gold Mash. And don’t get us started on the sliders (seriously, mark your calendar). With a variety of large and small plates and creative cocktails, it’s no wonder Lance has built a following of regulars. Stop by his demo this Saturday and find out for yourself!

The anticipation of fall has made us just that “punny,” y’all. But in all seriousness, we’re excited to welcome back acclaimed chef and recent cartoon star Kevin Gillespie to the PRFM demo tent. His passion for using local, organic, and sustainable ingredients is unwavering and his food is a testament to the delicious results. For a taste of the much-deserved praise Gillespie’s received, check out last year’s blog post. This year, he’s been up to just a few more things…working on two cookbooks and partnering with Morelli’s Ice Cream on a second location complete with seasonal sundaes. Oh, and a little thing like getting married. In his spare time (which we can’t believe he has much of), he enjoys camping, playing music and barbecuing. You won’t want to miss this Saturday’s demo—local food from one of our favorite local gents.

P.S. Market Gift Certificates are now available—perfect for everyone and every occasion because, hey, everyone loves good food!

Fall is in the air

This Week at PRFM
OK, we’re not going to lie, we may have done a “thank you, weather” dance this week because fall is definitely coming, y’all. With that crisp air comes pears and apples, so be sure and grab some at this week’s PRFM! And do a little dance, maybe (we won’t judge).

Chef Demo with Todd Ginsberg
of
Bocado — 10:00 a.m. on 9/10
Chef Demos are sponsored by
Whole Foods Market
He’s not just the guy who creates that amazingly delicious “other burger” over on the Westside. Well, he is that guy (thanks, Chef), but he’s also an honor grad from the Culinary Institute of America and has worked in some mighty fine kitchens—from the award-winning The Dining Room at The Ritz-Carlton in Atlanta to Paris’ acclaimed Lucas Carton restaurant to launching Madison's in Highlands, N.C. From there, Ginsberg moved to New York City where he applied his talents at the world-renowned Alain Ducasse. But we’re oh-so-glad he decided to return to the ATL, where he joined Concentrics Restaurants and made his mark as opening executive chef at TAP and went on to serve as chef at TROIS. Ginsberg’s since branched out on his own to open Bocado, now in its second year, to rave reviews—from being named one of Atlanta Magazine’s “Best New Restaurants” to one of AJC dining critic John John Kessler’s “new favorites” to a shout-out in The Wall Street Journal’s article “The New New South.” At Bocado, you can enjoy lunch and dinner featuring fresh produce from PRFM farmers, which is just another reason why we’ve got nothing but rave reviews for Chef Ginsberg, too. Oh, and that burger…

Having come to Livingston from Spice Market Atlanta, Stevenson’s training with master chef Jean-Georges Vongerichten is evident in the international influences he brings to the table—the result? On WABE: Sweet Sounds of the Ice Cream Social

July is National Ice Cream Month and, while it is clearly our duty to enjoy a bowl or two of this frozen treat as often as time and pant sizes allow, it’s even better to have enjoyed 30 fantastic flavors at last month’s Ice Cream Social! The fourth annual event benefiting Slow Food Atlanta brought together top chefs and home cooks, one delicious bowl at a time. Take a listen to the sounds of this year’s Social here, originally aired on WABE’s City Café. Warning: side effects to listening include hand to spoon reflexes and frequent trips to your freezer or local ice cream purveyor.

Celebrate National Ice Cream Month and the Farmers Market by making up a batch of homemade ice cream, yogurt or sorbet, like this easy Blueberry Sorbet, made with fresh berries from the Market!
