Chef Nick Leahy is one worldly chef. He was born in Bermuda and grew up in England before moving to Atlanta in elementary school. With a mother who's half-French, he was exposed early on to delicacies like duck confit and knew even then that he wanted to be a chef. His culinary career has included stints at Food Studio, Two Urban Licks, Stats, and Parish, among others. But it was in 2011 that he and his wife really took an international leap of faith, traveling (and eating around) Europe and Africa for six months, then living in London for a year. In London, Leahy served as executive chef at Daylesford Organic, a restaurant that sources ingredients from its own farm. He brought back from abroad an even richer global perspective and a strengthened commitment to all things local and organic. Just down the road from PRFM, he opened his own restaurant, Saltyard, almost a year ago. Stop by the demo tent this Saturday to catch up with the chef!

You’ve heard of Richard Blais? Check. You’ve heard of his buzzed-about restaurant The Spence? Check. Here’s the chef that Blais trusts to craft an ever-changing, whimsical menu inspired by what’s fresh now. Adrian Villarreal brings to the table family inspiration (from Mexico) and classic training (from Le Cordon Bleu Paris). Growing up he prepared large family meals with his grandmothers and great aunt, then worked part time at his uncle’s restaurant. After graduation in Paris, Villarreal gained experience at Le Doyenne and La Maree before heading to the U.S. for a show-stopping start as chef de partie with Atlanta’s much-acclaimed (and much-missed) Joël. He later worked as executive chef at TAP before joining Blais at The Spence. Check out his demo this Saturday and pick up a couple new tricks (we’ve heard he’s got a few up his sleeves). You'll also pick up a spicy mushroom taco with pea shoots, spring onions, and herbs.

Aaron Russell, Pastry Chef at Restaurant Eugene, worked his way through culinary school while baking bread at night at Breadgarden, Atlanta's finest bakery at the time. After graduation, he became pastry chef at Nikolai's Roof, the first restaurant in the Southeast to receive 4 Mobil Stars. This led to a position as Assistant Pastry Chef at The Dining Room in the Ritz-Carlton Buckhead, which cemented his career path. While there, he was promoted to become the youngest 5 Mobil Star Pastry Chef in the nation. Aaron then took the position of Pastry Chef at Guenter Seeger's namesake restaurant Seeger's. Chef Seeger's austere approach to local, organic ingredients and simple preparations has held the most influence on Aaron's current style.

In 2008 and 2009, Russell was nominated for "Outstanding Pastry Chef" by the James Beard Foundation while working at The Chocolate Bar. In 2010, Chef Linton Hopkins invited Aaron to take charge of the pastry kitchen at Restaurant Eugene, where Russell has received three more James Beard Award nominations. This Saturday, Chef Russell surprises us with a summer dessert!

A rainy summer means a shorter tomato season, but fear not! Gather up summer’s juiciest fruit and can and freeze your way to a happy winter. You’ll also want to check out Attack of the Killer Tomato Festival founder Chef Ford Fry in the demo tent, and get inspired by the sounds of Irish Traditions music wafting about this week’s market.

For our homage to Ford Fry, one of Atlanta’s culinary giants, click here. Since we saw Ford under the demo tents last year, he’s added Buckhead’s newest hotspot King + Duke and Westside smash-hit The Optimist and Oyster Bar to his roster which also includes JCT. Kitchen & Bar and No. 246. Dedicated to using local products and making each of his restaurants a community gathering place, Ford is tireless in his creativity and reach. That’s why we’re not surprised at how many more projects he’s got in the works: the just-launched People’s food truck (benefiting non-profit City of Refuge), this fall’s St. Cecilia (Mediterranean in the former Bluepointe spot), and new concepts in Inman Park’s Krog Street Market and Alpharetta’s Avalon development next year. By now, you must know how we feel about Local Three. If you’ll pardon the pun, that goes double for the bar program there. For the last two years, your favorite PRFM vendors have paired up to create some amazing dishes, and you won’t want to miss what they’ve got in store for you this year. Plus, the silent auction is back with some incredible lots—“all you can eat” courses with pairings from Local Three’s Chris Hall, anyone? Yes, please. The Market will be open as usual during the Mash-up, so come ready to shop, taste, and bid on great auction items! This fundraiser pays for PRFM’s city-of-Atlanta-required police officer—thanks in advance for helping us fund this part of the market so we don’t have to pass on the additional cost to our vendors by raising their fees. $5 tickets to taste all the dishes and vote for a favorite go on sale at 9:00 a.m. Celebrity food judges (Jennifer Zyman, Kim Severson, and Jenny Turknett) offer their comments plus shoppers’ and judges’ favorites will be announced at 11:00 a.m. After the silent auction closes at 11:15 a.m., PRFM will accept cash, check, debit card and Visa/MC for auction item payments.

We’re so glad he returned to the A in 2008, after wowing Louisville as chef de cuisine at the Seelbach Hilton’s Oakroom (Kentucky’s only AAA Five-Diamond restaurant). On Thursday, October 11, the Georgia Conservancy is honoring Will Harris of White Oak Pastures at their annual gala, ecoBenefête. Join the Conservancy in celebrating Will for his dedication to advancing organic and sustainable farming! Tickets will be on sale at PRFM this Saturday, September 29. Five percent of the proceeds generated from the sale of memberships, merchandise, and tickets at PRFM will be donated to the market's “Emergency Farmer Fund.” Founded in 1967, the Georgia Conservancy is the state’s oldest environmental organization dedicated to protecting Georgia land and water.
