She's constantly evolving and actively pursuing new takes on Southern French cuisine, and has cooked for dignitaries, celebrities, and all-star athletes from around the world. With her love of community, she has helped Twain's Brew Pub actively grow their Atlanta Community Food Bank fundraiser and is partnered with Global Growers, helping create opportunities in sustainable farming in Georgia. Chef Haseler has also partnered with Springer Mountain Farms, Brasstown Beef, and Greener Fields Together to promote buying local. Join her under the demo tent this Saturday!

Georgia Organics Community Tent

They also serve as the National Farm to School Network's State Lead for Georgia. Georgia Organics will be at the market to provide info about their program and how you can get involved!

Tomato Time

A rainy summer means a shorter tomato season, but fear not! Gather up summer’s juiciest fruit and can and freeze your way to a happy winter. You’ll also want to check out Attack of the Killer Tomato Festival founder Chef Ford Fry in the demo tent, and get inspired by the sounds of Irish Traditions music wafting about this week’s market.

Chef Demo with Ford Fry
of Rocket Farm Restaurants
10:00 a.m. on 7/20

Chef Demos are sponsored by
COUNTRY Financial
For our homage to Ford Fry, one of Atlanta’s culinary giants, click here. Since we saw Ford under the demo tents last year, he’s added Buckhead’s newest hotspot King + Duke and Westside smash-hit The Optimist and Oyster Bar to his roster which also includes JCT. Kitchen & Bar and No. 246. Dedicated to using local products and making each of his restaurants a community gathering place, Ford is tireless in his creativity and reach. That’s why we’re not surprised at how many more projects he’s got in the works: the just-launched People’s food truck (benefiting non-profit City of Refuge), this fall’s St. Cecilia (Mediterranean in the former Bluepointe spot), and new concepts in Inman Park’s Krog Street Market and Alpharetta’s Avalon development next year. He’s also founder of one of Atlanta’s most scary-good events, The JCT. Kitchen & Bar Attack of the Killer Tomato Festival (benefiting Georgia Organics). Be sure and ask him about the annual fest happening this Sunday—we hear tell of a chef/bartender/celeb dunk tank.

Health Class is In

Join PRFM this Saturday for Kids' Healthy Eating Day!

Chef Demo with
Jason Paolini
of Restaurant Eugene
10:00 a.m. on 8/25

Chef Demos are sponsored by
Whole Foods Market

If you know (and love) how Chef Linton Hopkins’ Restaurant Eugene is an integral part of Atlanta’s farm-to-table movement, you know just how much care goes into the food and experience there. And you also know that there are good folks behind that good food and fun. Whether you’re in the know or just finding out, you’ll want to spend some time with Executive Sous Chef of both Restaurant Eugene and Holeman & Finch Public House, Jason Paolini. Like Chef Hopkins, Jason’s respect for the art and craft of American cuisine developed early in life, growing up hunting and fishing in Belle Chasse, Louisiana—from then on, he’s known the importance of fresh, quality ingredients. Jason’s wowed folks with his delicious preparations from getting his start in New Orleans’ famed Palace Café to his time working with Gary Mennie at Canoe and Taurus to his stint as opening sous chef at Craft Bar Atlanta. He found his culinary home with Chef Hopkins in 2009, when he became sous chef for Holeman & Finch Public House. Since then, he’s been promoted to Executive Sous Chef there and at Restaurant Eugene, where he and Chef Hopkins create some of this city’s finest American cuisine. You won't want to miss his demo this Saturday, with kid-friendly foods that'll wow 'em!

Chef Demo with Lara Creasy
of JCT., No. 246, & The Optimist
10:00 a.m. on 6/9
Chef Demos are sponsored by
Whole Foods Market
If you’ve enjoyed a delicious beverage at JCT. Kitchen & Bar, No. 246, or Westside’s newest hotspot The Optimist and its Oyster Bar, you’ve got master mixologist Lara Creasy to thank. We told you about her many accolades last year, but such a genius as Lara is constantly receiving more honors for her work crafting some of the freshest cocktails in the southeast. She currently serves as secretary for the Atlanta chapter of the U.S. Bartenders’ Guild and just completed her Certified Specialist of Wine course, receiving the highest exam score in her class. She’s drawn coastal inspiration for the bar program at Chef Ford Fry’s most recent debut, seafood restaurant The Optimist, including a clever martini of pink gin, blanc vermouth, and a garnish of smoked salmon. At The Oyster Bar, Lara features a daily punch with seasonal fruit served by the pitcher and “oyster backs” made to pair with daily raw bar specials. Her wine and beer list also feature coastal regions and port cities, meaning that a staycation is just a hop, skip, and a sip across midtown. You’ll want to swing by the demo tent this Saturday for a taste of the good life.

A More Perfect [Food] Union

This week at PRFM

Chef Demo with Steven Satterfield
of
Miller Union — 10:00 a.m. on 10/8
Chef Demos are sponsored by
Whole Foods Market

If you care about the local food movement in Atlanta, you care deeply about Miller Union. There, Executive Chef and Co-Owner Steven Satterfield brings his 20 years of experience in the restaurant industry to bear in a meaningfully delicious way, with a menu that takes root from his strong relationships with local farmers. A Georgia native who spent his childhood in Savannah, Satterfield creates his dishes around the week’s Southern harvest; he is careful to prepare foods with rustic preparations that highlight those beautiful flavors that come from ingredients at their peak. His eye for design led him to the architecture program at Georgia Tech, with a final year studying abroad in Paris, but after graduation he found himself working in kitchens and discovered a new passion: cooking. As any diner who’s visited Chef Satterfield during his time at Floataway Café, Watershed, and now at Miller Union can attest, his cooking is a true art form. Satterfield’s commitment to the good food movement goes beyond the diner’s experience, though; he’s also an active member of Slow Food Atlanta, Georgia Organics and the Southern Foodways Alliance. And his great work has not gone unnoticed—in 2011, he was nominated for Food & Wine and CNN Eatocracy’s “People’s Best New Chef,” following Miller Union’s placement on the “Best New Restaurants in America” lists from Bon Appetit and Esquire, as well as its being named Atlanta magazine’s “Restaurant of the Year” in 2010. Also, a little group called the James Beard Foundation recognized Miller Union as a semifinalist for the national award of best new restaurant in 2010. When the celebrated chef isn’t in the kitchen, he’s cycling, exploring the Georgia coast, listening to new music, and researching cocktails with the bartenders of Miller Union. Oh, and one other thing—teaching people to cook (that’s YOU this Saturday)!

Read all about Chef Ford Fry’s mastery of “Southern Farmstead Cooking” here, and get excited about his return to our demo tents on Saturday! This top tomato has brought us one pretty fantastic summer Tomato Festival after another, not to mention some incredible Southern eats (seriously, y’all) at JCT. Kitchen, Wiener Wednesdays (finally, a reason to like Wednesday!) at JCT. Bar, and now (drum roll, please) he’s opened one of the most highly anticipated restaurants of the year, No. 246 (you surely remember his “partner in dine” Chef Drew Belline from our demo last weekend). But our love for Chef Fry is more than parenthetical—it’s a major tomato crush. This is one demo not to miss!

A Whole Lot of Summer Going On

This Week at PRFM

Chef Demo with
Drew Belline
10:00 a.m. on 7/9
Chef Demos are sponsored by
Whole Foods Market
When you think about it, PRFM produce is pretty lucky. Not only is it lovingly grown and harvested, but it’s utilized by the city’s top chefs each week (and by some pretty special shoppers, too)! This week is no exception—we are thrilled to welcome Chef Drew Belline to the Demo Tent, where he’ll wow you with what he does best; create exceptional cuisine based on local and seasonal ingredients (insert our lucky produce here). Belline formed this culinary foundation working under such highly esteemed chefs as Charlie Palmer and Tom Colicchio in NYC before returning to his home state of Georgia to serve as sous chef at Bacchanalia. There, he trained under renowned Chefs Anne Quatrano and Clifford Harrison before becoming the opening chef de cuisine for Quinones at Bacchanalia; at Quinones, Chef Belline designed a daily changing 12-course tasting menu and soon achieved his goal of a five star rating from the Atlanta Journal –Constitution. Since then, for the last four years, he has delighted guests as the chef de cuisine at Floataway Café. With such a lauded career, it’s no wonder Atlanta foodies just can’t wait for Belline’s next venture, as executive chef and partner (with none other than JCT. Kitchen’s Ford Fry) of No. 246, slated to open in Decatur this Tuesday, July 12—a locally-driven, Italian-inspired restaurant? Yes, please. A chef who cares about our lucky produce and counts among his hobbies fly fishing and foraging for mushrooms? One to check out, for sure.

Kids Learning Patch: 7/9
8:30 a.m.-12:00 p.m.
This week’s topic:
The Chicken or the Egg?
Sponsored by The Captain Planet Foundation
Bring your “flock” to hang out with some local baby chicks! Kids will learn about the varieties of chickens, egg colors, and more. They’ll also meet a Buckhead chicken expert who’s just 12 years old. Now, that’s something to cluck about—don’t miss it!

News you can use

YES, you still can! PRFM is partnering with The Viking School to offer an intensive canning series. Each class features a mystery ingredient provided by the PRFM farmers. Just pick up your pre-paid bag of ingredients on Saturday at the Market and then join the class on Monday night from 6-8 p.m. at The Viking Cooking School. You’ll leave the class with recipes, sample jars of 2-3 recipes, and a whole lot of canning savvy. The first class will be July 25th and there are only 16 spots, so grab a pal and sign up here! Price per person, per class is $50.

GO GROW!

It’s February, y’all. Was one of your New Year’s resolutions to grow (figuratively) a little bit, perhaps? The old adage that “you are what you eat” has never been more prevalent and there’s never been a better way to grow than by empowering your mind and body. Get back to your roots and check out the 14th Annual Georgia Organics Conference & Expo “GO GROW!” Even if you’re unable to attend this March, you can still support the growth of Georgia’s own by making a donation to the farmer scholarship fund.

And if you can attend, you’re in for a great event, including the keynote speech from world-renowned advocate for organic agriculture and ecological prosperity, Vandana Shiva.

Taking place March 11-12 at Savannah’s International Trade & Convention Center, the two-day Georgia Organics conference is the largest sustainable agriculture event in the southeast.

The More You Grow

Georgia Organics is partnering with Anthony-Masterson Films to help produce GROW!, a film about Georgia’s young, sustainable and organic farmers. Since April, the filmmakers have interviewed 22 farmers and have traveled 2,000 miles of Georgia dirt. They hope to wrap production in November and show the film at next year’s Georgia Organics conference.

A quick word from the filmmakers: "Our hope for GROW! is to encourage young people to take up farming, to offer a good argument for people with land to turn it over to young farmers, and for communities to support these endeavors."

Follow the film’s progress here and watch clips here!
