Second Helpings

Ever wonder where the leftovers go after Saturday’s Peachtree Road Farmers Market? Don’t worry, none of those delicious market-fresh foods go to waste—each week, PRFM partners with Second Helpings to share the bounty of our farmers’ harvest. During our two year partnership, PRFM farmers and vendors have donated over 2,000 lbs of food to food pantries and shelters in metro Atlanta.

PRFM’s work with Second Helpings is the perfect complement to our partnership with the Wholesome Wave Program, which doubles EBT/SNAP (food stamp) and WIC benefits at the Peachtree Road Farmers Market. Making healthy local food accessible to all is part of PRFM’s mission and we are proud to see Second Helpings grow! With the addition of its first refrigerated truck, Second Helpings Atlanta greatly expands its perishable food pick up and distribution capabilities. Second Helpings volunteers deliver donated food every day of the week to food pantries and shelters in downtown Atlanta and the northern suburbs.

Please contact Myron Smith by phone at 404-256-4359 (h) / 404-358-6867 (c) or via email at donor@secondhelpings.info to learn more about Second Helpings Atlanta or to arrange for Second Helpings Atlanta to pick up food that you wish to donate.

Chef Demo with E.J. Hodgkinson
of
Woodfire Grill
10:00 a.m. on 10/22
Chef Demos are sponsored by
Whole Foods Market
Remember our friend Kevin Gillespie and a little outfit known as Woodfire Grill? Thought so. Then you won’t want to miss this week’s demo with Kevin’s right-hand-man (sous chef, for you industry folk), E.J. Hodgkinson. A native Californian, E.J. knows the value of organic local foods and the importance of sustainable agriculture. His previous work at Idaho’s prestigious Sun Valley Resort, California’s Tomei restaurant, and Austin’s 34th St. Café prepared him well to join Woodfire in 2008, just after moving to our fair city. There, he and Chef Gillespie work together in creating the daily menu and promoting locally-sourced, ingredient-driven cuisine. The result, as Woodfire fans know well, is locally-sourced, Woodfire-driven diners.

PRFM supports Food Day
Saturday, October 22
Food Day is a national program (similar to Earth Day) dedicated to uniting consumers, farmers, chefs, and more to push for healthy, affordable food produced in a sustainable way. Food Day Georgia is organizing an “I Eat Real” social media campaign to spread awareness, and PRFM is excited to partner with them on this exciting project! Stop by the Food Day tent this Saturday where you can write your own poster listing your favorite healthy food, have your photo taken with it, and a volunteer will post your photo to the Food Day Georgia Facebook page in support of Food Day 2011 (October 24th). Bringing a whole new meaning to say cheese!

Thanks and save the date…

A More Perfect [Food] Union

This week at PRFM

Chef Demo with Steven Satterfield
of
Miller Union — 10:00 a.m. on 10/8
Chef Demos are sponsored by
Whole Foods Market

If you care about the local food movement in Atlanta, you care deeply about Miller Union. There, Executive Chef and Co-Owner Steven Satterfield brings his 20 years of experience in the restaurant industry to bear in a meaningfully delicious way, with a menu that takes root from his strong relationships with local farmers. A Georgia native who spent his childhood in Savannah, Satterfield creates his dishes around the week’s Southern harvest; he is careful to prepare foods with rustic preparations that highlight those beautiful flavors that come from ingredients at their peak. His eye for design led him to the architecture program at Georgia Tech, with a final year studying abroad in Paris, but after graduation he found himself working in kitchens and discovered a new passion: cooking. As any diner who’s visited Chef Satterfield during his time at Floataway Café, Watershed, and now at Miller Union can attest, his cooking is a true art form. Satterfield’s commitment to the good food movement goes beyond the diner’s experience, though; he’s also an active member of Slow Food Atlanta, Georgia Organics and the Southern Foodways Alliance. And his great work has not gone unnoticed—in 2011, he was nominated for Food & Wine and CNN Eatocracy’s “People’s Best New Chef,” following Miller Union’s placement on the “Best New Restaurants in America” lists from Bon Appetit and Esquire, as well as its being named Atlanta magazine’s “Restaurant of the Year” in 2010. Also, a little group called the James Beard Foundation recognized Miller Union as a semifinalist for the national award of best new restaurant in 2010. When the celebrated chef isn’t in the kitchen, he’s cycling, exploring the Georgia coast, listening to new music, and researching cocktails with the bartenders of Miller Union. Oh, and one other thing—teaching people to cook (that’s YOU this Saturday)!

If you haven’t had the pleasure of a leisurely brunch at The Shed or visited the fine folks there for Wednesday’s $3 Slider Night (not your usual sliders, y’all), get out your pin, paper, or techno gadget and jot this down: check out The Shed at Glenwood! You’ll feel right at home in the cozy neighborhood spot and, with Executive Chef Lance Gummere at the helm of the open kitchen, you’ll want to stay a while. His extensive culinary experience includes over 15 years working with Chef Shaun Doty and he carries his love for simply prepared, market fresh menus to his dishes at The Shed. His outlook is casual, but his food is something serious—the perfect combination which results in dishes like Braised Suckling Pig with Heirloom Corn Grits and Collards, Baked Cedar Plank North Carolina Trout with Mushrooms, Scallions, and Fennel Salad, and a Shepherd's Pie made with Smoked Beef Brisket and Yukon Gold Mash. And don’t get us started on the sliders (seriously, mark your calendar). With a variety of large and small plates and creative cocktails, it’s no wonder Lance has built a following of regulars. The Perfect Cup

Check out this week’s PRFM demo to learn how to brew the perfect cup of coffee. And next week, enjoy that cup a little longer—fall hours begin on October 1 when the market opens at 9:00 a.m.

Brewmaster Demo with Jason Dominy
of
Batdorf & Bronson Coffee Roasters
Brew the Perfect Cup — 10:00 a.m. on 9/24

Chef Demos are sponsored by Whole Foods Market
Coffee-lovin’ PRFM shoppers know that Batdorf & Bronson makes a luscious cup of Joe. Maybe that’s because the beans are roasted just down the way by folks who really care about their craft and your cup. One of those folks is Jason Dominy, Community Outreach and Customer Support Coordinator, who’s joining us this Saturday to answer the question, “How do you get the perfect cup of coffee?” Like all of our demo stars, Jason knows his stuff. He’s been working in the coffee industry for fourteen years and has been a barista, coffeehouse manager, and coffee roaster. Jason’s passion is teaching about great coffee. He sips the sip and walks the walk by serving as chair of the Barista Guild of America; as an espresso expert for the Specialty Coffee Association of America; and he took second place in the Southeast Regional Brewer’s Cup Competition. Whether you’re looking to improve your morning or impress your guests, get ready for competition-ready brew!

The Birds and the Beans
What’s sustainably grown coffee got to do with protecting bird habitats? Atlanta Audubon's Shade-Grown Coffee Campaign has been working since 1996 to increase public awareness of the connection between neotropical migratory birds and traditional coffee farms. The campaign aims to educate consumers about the positive role that shade-grown, fair-trade coffee (like Batdorf & Bronson’s) plays in conserving bird habitats in coffee-producing countries. Come learn more about the issue at PRFM this Saturday and then pick up some “bird-friendly” coffee from Batdorf & Bronson Coffee Roasters.

The Market Mash-Up is getting real, y’all. Check out our swanky poster (click to
enlarge) and save the date for fall foods and a mighty fine silent auction!

The anticipation of fall has made us just that “punny,” y’all. But in all seriousness, we’re excited to welcome back acclaimed chef and recent cartoon star Kevin Gillespie to the PRFM demo tent. His passion for using local, organic, and sustainable ingredients is unwavering and his food is a testament to the delicious results. For a taste of the much-deserved praise Gillespie’s received, check out last year’s blog post. This year, he’s been up to just a few more things…working on two cookbooks and partnering with Morelli’s Ice Cream on a second location complete with seasonal sundaes. Oh, and a little thing like getting married. In his spare time (which we can’t believe he has much of), he enjoys camping, playing music and barbecuing. You won’t want to miss this Saturday’s demo—local food from one of our favorite local gents.

P.S. Market Gift Certificates are now available—perfect for everyone and every occasion because, hey, everyone loves good food!

Fall is in the air

This Week at PRFM
OK, we’re not going to lie, we may have done a “thank you, weather” dance this week because fall is definitely coming, y’all. With that crisp air comes pears and apples, so be sure and grab some at this week’s PRFM! And do a little dance, maybe (we won’t judge).

Chef Demo with Todd Ginsberg
of
Bocado — 10:00 a.m. on 9/10
Chef Demos are sponsored by
Whole Foods Market
He’s not just the guy who creates that amazingly delicious “other burger” over on the Westside. Well, he is that guy (thanks, Chef), but he’s also an honor grad from the Culinary Institute of America and has worked in some mighty fine kitchens—from the award-winning The Dining Room at The Ritz-Carlton in Atlanta to Paris’ acclaimed Lucas Carton restaurant to launching Madison's in Highlands, N.C. From there, Ginsberg moved to New York City where he applied his talents at the world-renowned Alain Ducasse. But we’re oh-so-glad he decided to return to the ATL, where he joined Concentrics Restaurants and made his mark as opening executive chef at TAP and went on to serve as chef at TROIS. Ginsberg’s since branched out on his own to open Bocado, now in its second year, to rave reviews—from being named one of Atlanta Magazine’s “Best New Restaurants” to one of AJC dining critic John John Kessler’s “new favorites” to a shout-out in The Wall Street Journal’s article “The New New South.” At Bocado, you can enjoy lunch and dinner featuring fresh produce from PRFM farmers, which is just another reason why we’ve got nothing but rave reviews for Chef Ginsberg, too. Oh, and that burger…

At the beginning of her junior year, Katie started a little business called Live Forever Muffins, selling vegan muffins to her friends and family. Today, she’s inspiring her loved ones to eat healthy, planning to study nutrition in college, and is excited about a life devoted to good health. Chef Demo with Chris Hall of Local Three
10:00 a.m. on 8/13
Chef Demos are sponsored by Whole Foods Market

Here at PRFM we don’t make a habit of reusing a restaurant’s web copy verbatim. But Local Three’s is just too spot-on to change, so here goes…“Owners, Chef Chris Hall, Chef Todd Mussman and Business Dude Ryan Turner are the three locals [you might know Todd & Ryan from a little outfit called Muss & Turner’s]. Their restaurant Local Three represents a shared philosophy on food, drink, hospitality and how to do business. That philosophy is straightforward: People Matter Most, Local Is Priority, Seasonal Makes Sense, Authenticity Rules, Quality Governs, Delicious Trumps, Pretense Stinks, Comfort Feels Good, Appreciation Tastes Better, Prudence Sustains It All.” We mean, really. Really. You’re in for a good demo, folks. This Saturday, Chef Chris Hall will show us how it’s done, local-style. And we’re not just talking local foods (which is a given), but Chef Chris is also a bona fide local himself—he grew up just around the corner on Peachtree Battle Ave. He’s a self-taught cook who’s worked in kitchens from Philadelphia’s Le Bec Fin to Atlanta’s Canoe and 4th & Swift. Chris now lives in Smyrna with his wife Julie and works at Local Three to deliver some mighty fine (and fun) food. We also hear he’s quite the Georgia Tech fan, too—so don’t miss this weekend’s demo or you and your tailgate will regret it!

Over one year later, we see the signs of progress. The Southern Table, Simply the Best

Chef Demo with Justin Burdett of
Miller Union
10:00 a.m. on 8/6
Chef Demos are sponsored by Whole Foods Market

Since its opening in November 2009, Miller Union (MU) has taken Atlanta by storm. A storm of fantastic, Southern farmstead food that is as purely beautiful on the plate as it is on the palate. And us Atlantans aren’t the only converts to co-owner and executive chef Steven Satterfield’s foodways—high falutin’ folks like The New York Times, Travel and Leisure, Bon Appétit, CNN Eatocracy, and Food and Wine would agree. When it opened, MU quickly ascended to “top new restaurant” status both in the city and in the nation—named by Esquire as one of the best new restaurants in 2010. Chef de Cuisine Justin Burdett has been with MU from the beginning and, simpatico with MU’s good food, Justin is good people. Raised on the traditions of Southern cooking, his family heritage and appreciation for his grandmother’s style in the kitchen inspired Justin to pursue a career in the culinary world. Prior to joining MU, he applied his serious love for Southern cuisine and a commitment to the local food movement to his roles at Asheville’s Nova and The Market Place, and also worked with Chef Hugh Acheson at Athens’ acclaimed Five & Ten restaurant. At Miller Union, Justin works with Chef Satterfield’s vision for a simple approach to farmstead-inspired cooking where braising, pickling, preserving and canning are often part of the process. Together, they update the restaurant’s menu daily, celebrating our farmers’ seasonal harvest. Justin lives in Stone Mountain with his wife and two-year old daughter; there, he enjoys spending time in his garden growing fresh lettuces, beets, and other vegetables for his family table. Recently, he made the family (and all of us) proud by winning Food Network’s “Chopped.” Join Team Justin this Saturday under the tent for a multiple course demo (he’s a winner, y’all), featuring melons, figs, eggplants, tomatoes, local meats, potatoes, herbs, honey, and a “put up” or two. You know, like you do at your house, right? After this demo, you will!

Think of it as a Southern Summer Thanksgiving—with all the fixings (and only the good kind of crazy family love). If you missed last year’s inaugural event, now’s your chance to get in on the fun! Imagine a covered picnic area with an idyllic view of a lake and surrounding pastureland. Then imagine that area filled to the brim with the potluck specialties of the South’s finest chefs: Anne Quatrano, Billy Allin, Dan Latham, Ford Fry, Hilary White, Hugh Acheson, Joe Truex, Shaun Doty, Linton Hopkins, Michel Nischan (honorary Atlantan), Kevin Gillespie, Steven Satterfield and Todd Ginsberg are all bringing their best sides, pickles and desserts. Jim N' Nicks is cooking the meat from White Oak Pastures. Quivera is pouring the wine. Terrapin is serving the beer and Greg Best is mixing the punch. It couldn’t get better, you say? Well, it does. This event is the primary fundraiser for Wholesome Wave Georgia, so your dollars will not only go towards a fantastic meal but will also benefit this important program that works with 13 farmers markets statewide (including PRFM) to support our local farmers, economy, and community by doubling the value of SNAP benefits (formerly food stamps) spent at local farmers markets. So yes, $1 = $2 at PRFM thanks to Wholesome Wave Georgia. You can also support Wholesome Wave while you’re at the supper by setting your sights on the live auction—perhaps they can interest you in a day with Chef Linton Hopkins (private cooking classes and dinner at Restaurant Eugene) for 4; or a cooking class for 8 with Chef Hugh Acheson at the home of Steve and Marie Nygren (Serenbe royalty); or maybe you want to get the whole gang together for a cocktail party for 30 with food and drinks provided by Chef Steven Satterfield; or you could keep it low-key with a dinner for 8 provided by Chef Kevin Gillespie, including a Sunday night stay at the Inn at Serenbe. Where can you buy tickets for this incredible fête? We thought you’d never ask! For tickets ($100 per person) and more information, go here!

This top tomato has brought us one pretty fantastic summer Tomato Festival after another, not to mention some incredible Southern eats (seriously, y’all) at JCT. Kitchen, Wiener Wednesdays (finally, a reason to like Wednesday!) at JCT. Bar, and now (drum roll, please) he’s opened one of the most highly anticipated restaurants of the year, No. 246 (you surely remember his “partner in dine” Chef Drew Belline from our demo last weekend). But our love for Chef Fry is more than parenthetical—it’s a major tomato crush. This is one demo not to miss!

Chef Demo with
Drew Belline
10:00 a.m. on 7/9
Chef Demos are sponsored by
Whole Foods Market
When you think about it, PRFM produce is pretty lucky. Not only is it lovingly grown and harvested, but it’s utilized by the city’s top chefs each week (and by some pretty special shoppers, too)! This week is no exception—we are thrilled to welcome Chef Drew Belline to the Demo Tent, where he’ll wow you with what he does best; create exceptional cuisine based on local and seasonal ingredients (insert our lucky produce here). Belline formed this culinary foundation working under such highly esteemed chefs as Charlie Palmer and Tom Colicchio in NYC before returning to his home state of Georgia to serve as sous chef at Bacchanalia. There, he trained under renowned Chefs Anne Quatrano and Clifford Harrison before becoming the opening chef de cuisine for Quinones at Bacchanalia; at Quinones, Chef Belline designed a daily changing 12-course tasting menu and soon achieved his goal of a five star rating from the Atlanta Journal –Constitution. Since then, for the last four years, he has delighted guests as the chef de cuisine at Floataway Café. With such a lauded career, it’s no wonder Atlanta foodies just can’t wait for Belline’s next venture, as executive chef and partner (with none other than JCT. Kitchen’s Ford Fry) of No. 246, slated to open in Decatur this Tuesday, July 12—a locally-driven, Italian-inspired restaurant? Yes, please. A chef who cares about our lucky produce and counts among his hobbies fly fishing and foraging for mushrooms? One to check out, for sure.

Spice up your Fourth!

Join us at the Peachtree Road Farmers Market this Saturday, July 2, for some sizzling music by local jazz group Jules and The Gents. And make your shopping list now for all of your hot July Fourth items: veggies, fruits, hot dogs, ground beef, fresh buns, and maybe a few cookies or a pound cake for dessert (perfect with our farmers’ fresh berries)!

Plus, you won’t want to miss this week’s Chef Demo at 10:00 a.m. with Asha Gomez, founder and chef of Spice Route Supper Club— Asha’s secret monthly dinner events have become the talk of the town, and for excellent reason! Lucky guests at Asha’s five-course dinners enjoy the experience of authentic Indian home cooking, highlighting fresh flavors and Kerala-specific cuisine. The Supper Club’s events are themed around a region, an ingredient, or Asha’s own whims (a little PRFM wisdom: the best surprises often come from a whim!). A native of Kerala, India, Gomez grew up along the spice route and was exposed to its incredible influence on her culture’s food. She honed her culinary talents through creating family meals with her mother and three aunts, inspired by the plethora of spices and the traditions of India’s cuisine. At her Supper Clubs, she shows just how delicious it is to learn about a people’s culture through a shared meal. We hope you’ll share in Asha’s demo this Saturday because it’s sure to inspire, delight, and add a little kick to your holiday weekend! Be sure to ask about Asha’s hot-off-the-presses news—her new restaurant, Cardamom Hill, coming soon to Northside Drive—just another tasty reason we can look forward to fall.

But first, let’s finish enjoying summer—and in true PRFM fashion, this holiday weekend offers fun for the whole family—Celebrate Fourth of July the healthy way with Health Starts Here Kids! Join our Whole Foods Market Healthy Eating Liaison, Audrey Gámez, at the Market for a special healthy eating activity and a patriotic scavenger hunt complete with prizes. Join the fun from 8:30 a.m. with the Market's opening bell until market close at Noon. You won’t want to miss it!

Whole Foods Market
We couldn’t be happier that the Kitchen Maestro is returning for an encore performance this Saturday! If you enjoyed Chef Gerry Klaskala’s demo last year or have feasted your eyes and palates on his dishes at Aria, you know he deserves a standing ovation for his masterpieces. It was, after all, Chef Klaskala’s passion for both food and art that inspired his career and drives one of Atlanta’s finest restaurants. His goal is to leave guests both fulfilled and intrigued when they leave Aria—the fulfillment of that goal is what makes Chef Klaskala a true culinary artist. Check out his demo to see what brushstrokes he creates with the produce of summer!
