2.5 Tbl Cold Butter
.25 t Allspice
.16 t Mace

DIRECTIONS: In a Large Pan cover peeled sunchokes with heavy cream and simmer until fork tender. Place in the blender and puree. Fry skins of sunchokes and place underneath the puree.
