For the dressing
¼ cup red wine vinegar
¼ cup parsley*
¼ cup dill*
1 Tblspn creole mustard
1 clove green garlic, pressed
¾ cup extra virgin olive oil
Salt & Pepper to taste
In a mixing bowl, combine garlic, herbs, vinegar and mustard. Slowly drizzle in oil until combined. Salt and pepper to taste.
For the salad
2 bunches kale, stems removed, julienned
2 bunches Swiss chard, stems removed, julienned
½ head cabbage, core removed, julienned
1 cup golden raisins
½ cup strawberries
½ cup basil, sliced thin*
½ cup almonds, sliced, toasted
In a large bowl, mix all ingredients together. Add dressing sparingly until dressed to the amount you like!
