Start with 1/2 a case of organic Watsonia Peaches. Peel half of the peaches (1/4 of the case). Remove the pits of all the peaches. Then puree both the peeled and unpeeled peaches together in a blender. Once pureed, the 1/2 case should yield approximately 6 quarts of puree.
In a large pot place the following:
2 quarts of Peach Puree
1/2 quart of water
1/4 quart of orange juice
Zest of 1 orange
1 Vanilla Bean
3 Tonka Beans (substitute an additional vanilla bean if unavailable)
1/3 cup of Wildflower Honey
1 cup of Brown Sugar
20 Coriander Seeds, cracked
2 Star Anise, cracked
5 Allspice seeds, cracked
1 Cinnamon Stick
2 Sprigs of Thyme
- Bring to Boil. Turn down heat and simmer for at least 2 hours, or to taste.
- Chinois (pass through a fine sieve) out all solids. Let cool, then add 4 ounces of Cinnamon Tincture or Substitute Cinnamon Extract
To Make your own Cinnamon Tincture
4 ounces Combier Peach Liqueur
2 ounces Licor 43
1/3 oz Fees Peach Bitters
1/3 oz Fees Old
Fashioned Bitters. (To make the cinnamon tincture, add 5 cinnamon sticks to a 750ml bottle of
Everclear; let sit for 1 week shaking the bottle twice daily).
Drink Recipe:
2 ounces Peach "Cider"
1 1/2 oz Four Roses Bourbon
Serve over Ice.
