Organic pork 1 lb1 inch cubes
Soy Sauce 2T
New Garlic 2 stalks
Red Pepper Flakes 1 teaspoon
Salt & Pepper to taste
Egg White ½ whipped
Rice Flour ½ cup
EV Olive Oil ½ cup
Chicken Stock 8 ounces
Peaches 3 medium dice
Oranges 2 juiced and 1/3 zested
Chard 4 stalks, medium slice
Spring onion 1 small, sliced thin
Turnips, spring 1 bunch, sliced thin
Fresh Mint 2 stalks, about 16 leaves, sliced thin
Sesame Oil 2 Tablespoons
Equipment
Knife, Board, High heat burner, Wok or large sauté pan, spoon and tongs or chop
sticks.
- Marinate pork in soy while you prepare the other ingredients.
- Toss pork in salt and pepper and whipped egg white. Add rice flour to coat pork.
- Heat olive oil to high and add pork. Toss in pan till nice brown crust appears (2 to 4 minutes). Add new garlic and red chili flakes sauté for another 2 to 4 minutes or until caramelized.
- Add stock to deglaze pan. Add all other ingredients except sesame oil and sauté/stir fry for another 2 to 4 minutes. Toss with sesame oil. Check Seasoning and adjust with salt and pepper if needed. Enjoy!
