Yields 2 sandwiches
4 slices semolina bread
1 handful of baby heirloom tomatoes (sliced in half)
2 sprigs fresh thyme, picked
4 fresh basil leaves, torn
4 T chรจvre
2T olive oil
2 cloves garlic, minced
1T balsamic vinegar
2 T of farm salted butter
salt and pepper
- Mix tomatoes with garlic, balsamic, and olive oil, salt and pepper in a small mixing bowl. Set to the side while you prepare sandwiches
- Spread about 1 T of chรจvre cheese on each slice of semolina. Sprinkle thyme over cheese on each piece. Drain tomatoes and place on top of the cheese and thyme only on the bottom pieces of your sandwich. Cover with the top piece of semolina.
- Spread butter over the top and bottom pieces of the sandwich and prepare grill. Put sandwiches down on grill or pre-heated pan and cook for about 1-2 minutes. Flip sandwiches over and cook another 1-2 until toasted and cheese starts to melt.
