2 bunches arugula, washed
½ cup fresh lemon juice
½ cup extra virgin olive oil
1 bunch Hakurei turnips, sliced thinly
1 large cucumber, sliced thinly
5 ea radishes, sliced thinly
4oz rosemary cheddar
To Taste: French Picnic sea salt
Shave radishes, turnips & cucumbers paper thin on a mandolin (or slice thinly with a chef’s knife).
Place arugula, turnips, cucumber and radish slices in a medium mixing bowl. Gently drizzle lemon juice around the outside of the leaves, and follow with oil.
Toss gently and finish with salt and cheese.
Plate and enjoy!
