Arugula with Lemon, Turnips, Cucumbers, Radishes & Rosemary Cheddar

Serves 5

2 bunches arugula, washed
Β½ cup fresh lemon juice
Β½ cup extra virgin olive oil
1 bunch Hakurei turnips, sliced thinly
1 large cucumber, sliced thinly
5 ea radishes, sliced thinly
4oz rosemary cheddar
To Taste: French Picnic sea salt

  1. Shave radishes, turnips & cucumbers paper thin on a mandolin (or slice thinly with a chef’s knife).

  2. Place arugula, turnips, cucumber and radish slices in a medium mixing bowl. Gently drizzle lemon juice around the outside of the leaves, and follow with oil.

  3. Toss gently and finish with salt and cheese.

  4. Plate and enjoy!
