Summer Squash Salad Sliders

Serves 8


1 large Zucchini, small dice
1 large Yellow or Zephyr Squash, small dice
1 Tomato, small dice
1 Bell Pepper, seeds removed, small dice
1 small Chili, minced, seeds removed
1 red onion, chopped
2 c. Whole Milk Greek Yogurt
4 leaves each leaves basil and mint, chopped
1 clove garlic, minced
1 bunch arugula
Salt and pepper to taste
Slider Buns


  1. Combine chopped mint, basil, and garlic with yogurt, season to taste.
  2. Toss all remaining ingredients with herb yogurt, check for seasoning.
  3. Build sliders with torn arugula and squash salad.
