He's got more than five years of tenure with the Resurgens Hospitality Group, helming the kitchens of Restaurant Eugene, Holeman and Finch Public House, and H&F Burger. His devotion to the art and craft of American cuisine can be directly traced to his upbringing in Belle Chasse, LA. Rooted in family and building personal relationships through food, Chef Paolini prides his work on using the freshest ingredients from local farms.
