Tasso with Drunken Tomatoes, Zucchini, Sun Gold tomatoes, Squash Blossoms & Arugula

½ lb Tasso Ham
2 ea Zucchini or other heirloom squash
½ jar Drunken Tomatoes
1 lb Sun gold tomatoes
1 sprig basil
¼ lb arugula
4 ea squash blossoms
2 tbsp olive oil

  1. You can substitute prosciutto, speck or Tasso. It needs to be sliced thinly. Cut the ends off the zucchini and shave thinly with a mandolin. Add half the jar of drunken tomatoes and add to a mixing bowl with 3 tablespoons of the pickling liquid. Add the shaved zucchini and a pinch of salt. Halve some of the sun gold tomatoes and leave some whole for texture. Add the tomatoes to the bowl.
  2. Hand tear the squash blossoms and basil and add this to the bowl with arugula. Make sure to add the arugula, basil and squash blossoms right before serving. Toss all ingredients together with olive oil and salt to taste.
