Homemade Chicken Broth & Summer Tomato Sandwich Snacks

Summer Tomato Sandwich

Ripe Tomatoes
Great bread
Goat cheese
Salt & pepper

  1. You can figure this one out.

Chicken Stock

2 lb chicken feet
2 white onion, peeled & chopped
1 bunch celery, chopped
3 clove garlic
2 carrots, peeled & chopped
1 bay leaf
3 peppercorns
1 bunch parsley

  1. Place all on the above in a stock pot. Cover with cold water. Bring to a simmer. DO NOT BOIL!
  2. Let simmer for 2 hours, constantly skimming the debris at the top of the pot. Strain through a chinois.
  3. Cool.
  4. Use as needed.
