Cucumber, Peach and Radish Salad with Herb Dressing

(recipe yield 4 servings)


5 ea local peaches (fairly ripe)
4 ea (or 1lb) cucumber
1 bunch radish
1 bunch basil
1 bunch mint
1 cup Greek Cream Cheese
1 ea lemon
To Taste olive oil
To Taste honey
To Taste kosher or sea salt
To Taste black pepper

  1. Remove core from peaches, discard cut into wedges. De-seed cucumber (peel if desired) cut into large chunks, place in mixing bowl and toss with olive oil and salt(reserve).
  2. Wash and shave radishes on mandolin, toss into mixing bowl with cucumbers. Pick and tear mint and basil leaves, reserve. In separate mixing bowl, combine Greek cream cheese with honey, lemon and salt to taste.
  3. For final dish, either place the cream cheese mixture at the bottom of the serving dish, or dress the peaches with it. Toss the picked herbs with the cucumber and radish mixture, adjust seasoning as necessary, grind a small amount of black pepper over the top to finish, and drizzle with olive oil.
